Pollenzo represents the intersection of King Carlo Alberto of Savoy’s neo-Gothic vision and the eco-gastronomic objectives of Slow Food International. It is a place that brings together a unique, food-focused university, the world-renowned Banca del Vino (a living archive of wine), the Pollenzo Food Lab, a luxurious hotel, and a community of gastronomes from 80 countries, all working to reimagine the future of food.
DAY 1
Morning
Arrival and check-in at the Albergo dell’Agenzia
Visit to the Banca del Vino, including the Winefulness experience: a guided sensory meditation, using excellent wine as a means to cultivate awareness, but going beyond mere tasting. Followed by a light lunch at the Albergo dell’Agenzia’s restaurant. (1,30 h)
Afternoon
Work sessions (with optional facilitation by MCE staff)
Try a Little Mindfulness: guided meditation practice (indoors or outside), to cultivate awareness, mental presence, and emotional stability. (1 h)
Convivial dinner at the Tavole Accademiche – the dining hall of the University of Gastronomic Sciences.
Overnight stay at the Albergo dell’Agenzia.
DAY 2
Morning
Nature Yoga: before breakfast, a yoga lesson (either indoors or outside), to restore harmony among the body, mind, and nature. (1 h)
Breakfast
Hands on Pasta at the Pollenzo Food Lab: Making pasta or bread becomes a guided sensory meditation, connecting mind and body through a simple ritual with profound significance. (2 h)
